I want to share my progress on this.
I've received a couple of tips, but nobody really endorsed any alternative. RCS appears to only work in the Google messaging app, and the text selection is more or less the same in most. Someone did point me to a texting app in F-Droid that had better text selection, iirc, but said that this messaging app had other issues instead that felt like deal breakers for me.
AntennaPod was recommended to me by several people. I decided to try that first and then stopped there because it's simply very good. I had no reason to check any others. I can recommend this one.
Are there even local spreadsheet apps out there? The only ones I've heard of are Google Sheets or similar, that are cloud-first or even cloud-only. Disappointing, but oh well. I guess it's one of those "if I want it I'll have to make it myself" things, but I'll never do that 🤷
