Recipe: Swedish Mudcake
This is very much a Swedish thing. It's something we call "kladdkaka" which literally translates to "sticky cake". It's a sort of chocolate cake without baking powder, and with a gooey middle. Best enjoyed with whipped cream, or after a night in the fridge. Or both. Or, and this is my favourite, when you really really shouldn't.
Ingredients
150 g butter
450 ml sugar
225 ml flour
90 ml cacao powder
A bit of salt and a bit of vanilla sugar
3 eggs
Algorithm
- Set the oven to 160C/320F.
- Melt the butter.
- Mix all the dry ingredients in a bowl.
- Add the butter and mix it in.
- Add the eggs and mix it all.
- Pour it in a cake pan. Pretty much any kind will do.
- Put in the oven for about 35 minutes. When it's done you can gently shake the pan without it behaving like a liquid.
- Let cool. Remember that it'll solidify a bit more as it cools. When it's still warm the middle will probably be very very gooey. That's not by any means a bad thing, of course. It's kind of the point.
I use one of these cake pans, because with the removable sides I can wedge a baking paper in there and it won't stick.
